Ingredients:

1.5 cup grated fresh coconut
1 cup jaggery powder
1/4 tsp cardamom powder
Pinch of Nutmeg Powder
1 cup rice flour
1.5 cups water
A pinch of salt
1 tsp ghee
10-12 strands of saffron
3-4 tbsp milk

Instructions:

- In a pan, add grated fresh coconut and toast it slightly on medium flame. Then add jaggery powder and mix.
- Cook on medium heat until the jaggery melts and the mixture thickens. Add cardamom powder and nutmeg powder. Mix well. Your stuffing is ready.
- Heat water in a pan and then add a pinch of salt and a teaspoon of ghee.
- Once the water starts boiling, lower the heat and gradually add the rice flour and mix a little.
- Turn the heat off and cover the mixture with a lid. Let it sit for 5-8 mins. Take the mixture out and knead a soft rice flour dough.
- Grease the modak mould with ghee. Then add a little ball of rice dough and make a dent inside. Put the sweet coconut-jaggery mixture in and cover the bottom part with some more dough.
- Repeat for the remaining dough.
- Steam the modaks in a steamer for about 10-15 minutes or until they become slightly translucent.
- Once done, take them out and garnish with some soaked saffron strands or with desi ghee.
- Serve the modaks warm.
